Drink it now or cellar for up to 15 years. No need to decant but best to open it half an hour before service. A historic property with a very long winemaking tradition, Chateau de Meursault is located in the prestigious wine region of Meursault in the heart of the Côte de Beaune. The vineyards, which extend over approximately 65 hectares, are spread across the appellations of Meursault, Pommard, Puligny-Montrachet, Beaune, and Corton and include several Grands Crus and Premiers Crus and a dozen village or regional appellations. The estate includes the old castle, various outbuildings, and a park of approximately 10 hectares. Below the castle and the outbuildings, there are approximately 3500 m² of Cistercian-style caves, where over 800 barrels are kept. The Pinot Noir grapes are hand-picked in a vineyard located at the foot of the hill that benefits from an East/Southeast exposure and clay-limestone soils. After a period of maceration and fermentation at low temperatures, the wine rests on its lees for 15 months. Ladoix Les Chaillots is an elegant wine with a bright color and light ruby tones. On the nose, the wine shows good freshness with notes of blackcurrant and strawberry and hints of vanilla. On the palate, it is soft, with velvety tannins and a long fruity persistence on the finish. It has a medium body and a well-balanced acidity. The finish is long and warm. Try it with game birds or duck served with red fruit sauce.
