Cellar for 10 years or more. Decant for an hour or more before serving. This deep red wine brims with aromas of pomegranate and blackberry, underpinned with herby hints of fennel, hibiscus and "Herbs de Provence". It is an unfiltered expression of Priorat, crafted from the region’s classic red varieties: Grenache, which makes up 75% of the blend, and Carignan. Terroir Històric is a line of wines from Terroir al Límit. Rather than focusing on extremely specific terroirs around Priorat, it aims to capture a sense of the whole by harvesting from several vineyards around the region. The winery was founded in 2001 by German wine-maker Dominik Huber and South African enologist Eben Sadie, who eschewed the use of oak for the purest fruit flavours possible. This wine bursts with raspberry, cherry and pomegranate on the palate, with earthy garrigue notes and green hints of fennel. It is juicy and round in the mouth, with silky tannins and a vibrant acidity. The fruits were fermented in a neutral inox tank for 6 months. Crisp, balanced and easy to drink - it is designed to be the perfect introduction to red wine from Priorat. Consider pairing it with beef stew, meatballs with tomato, or nutty cheeses.
