The winemaking operations take place in the beautiful cellar designed aby architect Jakub Cigler, under the guidance of oenologist Jakub Smrčky. This elegant Classic Method sparkling wine is made with Pinot Noir and Chardonnay grapes, with the addition of base wines aged in oak barrels.
The second fermentation takes place in the bottle and the wine rests for 2 years on the lees before disgorgement. The Thaya Sekt Rose Brut has a splendid pink grapefruit color with some coppery nuances and a fine and persistent perlage.
On the nose, it reveals a broad and fresh aromatic profile with notes of currants and wild strawberries, dried citrus fruits and bread crust. On the palate it is round and silky, lively and juicy with a strong acidic vein and a long and persistent finish.
Served chilled, it makes an excellent aperitif for a summer dinner with friends, but it also pairs beautifully with pasta with scampi, seafood salads, butternut squash risotto and with shrimp or pumpkin tempura.
