Drink it now or cellar for up to 10 years. No need to decant. Domaine Francois Carillon is located in Puligny Montrachet in the heart of Burgundy. The vineyards of the estate are part of the heritage of the Carillon family known in the area since 1500. After years of working in the family business, Francois decided, in 2010, to split the family vineyard with his brother and found his own company. The Chardonnay grapes come from three plots located in the A.O.C. Puligny-Montrachet and Meursault, on clay-limestone soil. Here, the vines, aged between 33 and 59 years, are cultivated in an environmentally friendly way according to the biodynamic regime and without the use of chemicals. Fermentation takes place in oak barrels, where the finished wine then rests for about a year. Bourgogne Cote d'Or Blanc is a fresh and lively wine with an elegant and delicate aromatic profile. On the nose it reveals aromas of green apple and white peach, white flowers and pear with a gentle hint of vanilla. On the palate, it is round and balanced. It has a refreshing acidity and a good concentration of fruit. The finish is long and deliciously fruity. Try it with scallops, grilled white fish or soft cheeses. It is also excellent on its own as an aperitif.
