His family has been rooted in the region since the 1500s, and after working in the family business with his brother Jacques for a long time, Francois founded his winery in 2010. The 16 hectares of vineyards come from the family inheritance and are mainly located in the Puligny Montrachet area. The Chardonnay grapes are selected from two plots located in the center of Puligny Perrières, with vines over 50 years old. After manual harvesting, the bunches are pressed whole. The must ferments in barrels where it remains for a year. The maturation is then completed in tanks for a further 12 months. The Premier Cru Les Perrières is a wine of great elegance that reveals extraordinary aging potential. The color is clear and has lemon-yellow tones. The aromatic profile is fresh and powerful with notes of citrus, stone fruit, and green apple followed by mineral and smoky hints. The minerality returns strongly on the palate. It has a medium body and a marked acidity that gives it a youthful and refreshing character. The finish is long. Try it with chicken and shrimp stir fry, with scallops au gratin, or with pumpkin ravioli.
