Biodynamic Champagnes are still difficult to find, but this sensational Grand Cru from the Larmandier family is proof that working in harmony with Mother Nature can produce exceptional results. Pierre and Sophie converted the estate to biodynamic and organic agriculture over twenty years ago and their dedication to winemaking as a work of nature is clear in every bottle they craft. This old vine Champagne is sourced from their Cramant Grand Cru vineyards where the east-facing slopes tend to produce especially rich and concentrated grapes. Such are the complexities of producing top quality grapes here that this particular cuvee is only made during the very finest vintages. Following the harvest, the grapes are carefully picked by hand, pressed and then fermented directly in wood casks. The maturation process then begins with a total of 7-8 years spent maturating on the lees. The family has chosen to produce this Champagne as an Extra Brut, meaning that it has a very low dosage, to create a crisp, refreshingly dry taste. In the glass you’ll immediately notice the pale gold color with fine, persistent bubbles. On the nose it offers aromas of citrus, white flowers, and toasted bread, while on the palate, it has a creamy texture with flavors of lemon zest, green apple, and hints of minerality.
