Cellar for up to 20 years. Decanting for up to 1 hour before serving. A clear, vibrant red in the glass, this old vine Pinot Noir is bursting with scents of clove, warm soil, ripe cherry, orange peel, and tart red currant. It is a blend of three separate parcels from around the village of Savigny, with an average vine age of 50 years. This imparts a certain maturity to the wine, which is evident in its complex, medium- to full-bodied palate. Founded in 1946, Domaine Pierre Guillemot occupies a picturesque spot, on the corner of Savigny-les-Beaune’s town square. It is owned and operated by two brothers, Vincent and Pierre, who represent the sixth generation of Guillemot winemakers. Although the winery itself was founded by their grandfather, the Guillemot’s history of grape-growing and grape selling goes back much further. The wine’s subtle colour does not reflect the vibrant flavours you can find on the palate. Notes of cranberry, nutmeg, and orange peel intermingle with cigar smoke, raspberry, and dried mushrooms. A vein of bold acidity runs through each sip, and the tannins are finely grained and understated. It is a mature, long-lived Burgundy wine, perfect for a wide array of occasions, or pairing with roasted poultry and mature cheese.
