Drink it now or cellar for up to 8 years. No need to decant. The brothers Jean-Pierre and Michel Auvigue manage the family winery in the village of Charnay-Les-Macon. The grapes come in part from family farms and in part selected from the best areas of the Pouilly Fuisse, Saint Veran, and Macon appellations. The Auvigue winery uses only organic products in the vineyards, which are predominantly based around Solutre. To allow each plot to express itself at its best, Jean-Pierre and Michel Auvigue always adapt the winemaking process to the climate. The wines are only lightly filtered before being bottled to preserve all the elements necessary for the development of their true Burgundian nature. The hand-harvested Chardonnay grapes come from the villages of Solutré and Pouilly. The vines grow at an altitude of about 250 m on Cretaceous sedimentary rock, of a clayey-limestone type. The Pouilly-Fuissé Les Chailloux has a beautiful golden-straw yellow color with green hues. On the nose, it expresses all the minerality of its stony terroir and shows aromas of white flowers, violets, sour pineapple, and nice fresh fruit. On the palate, it is very complex with a lively freshness followed by ripe fruit. It is rich and round with a long buttery aftertaste. Have it with shellfish, white meats, or goat cheeses.
