In 1973 he developed and modernized the family winery, founded in 1802. Since then, he has never stopped improving the quality of the work in the vineyard and in the cellar. His goal has always been to produce pure and distinct champagnes in total respect for the environment, and now his mission is carried out aby his daughter Sophie. Michel Gonet winery has thus become one of the essential references of the region. Manual harvests, long bottle aging, attention to detail and a lot of passion make Michel Gonet's Champagnes absolutely distinguishable and exceptional. The grapes are carefully picked żeby hand and then pressed with the utmost care. They are vinified by fermentation at a low temperature in stainless steel tanks. The wine ages for 11 years in the bottle. This Champagne shows a pale golden yellow color with straw reflections. The foam is creamy, and the perlage is extremely fine. On the nose, the wine surprises with rich aromas of pineapple, ripe yellow apple, but also bread crust and fresh ricotta. The taste is intense and persistent, full, round. It is a highly drinkable and complex wine with a very pleasant finish and a boiled chestnut aftertaste. Try it with raw or grilled red prawns, fried squid, rabbit ragout, or pork.
