The I Saltari label was born from the collaboration of the Sartori di Verona and Colognola ai Colli wineries, which began about 20 years ago. The name Saltari refers to a historical figure of the guardians of the vineyards, who in ancient times protected the grapes until the harvest. Amarone Riserva I Saltari is produced with selected grapes coming from a vineyard covering approximately 6 hectares and located on the ridge of the Val d'Illasi at approximately 230 meters above sea level. The plants are approximately 20 years old and the soil has a calcareous-clay composition, with some traces of volcanic origin. After fermentation, the wine matures in barrels of various sizes for 48 months, before being bottled and resting for a further year in the bottle. The result is a balanced and round wine with a dense ruby-red color. The nose reveals fragrant notes of ripe red fruit and withered flowers, aromatic herbs, and dried figs, and then undergrowth and tobacco. In the mouth, it is powerful and harmonious with ripe, velvety tannins and balsamic notes. The finish is persistent and warm and recalls notes of red fruits. Perfect with game, spicy red meat stews, and mature cheeses.
