The Amarone della Valpolicella Classico from the Collezione Pruviniano is a blend of Corvina, Corvinone and Rondinella grapes from a vineyard located at about 200-250 meters above sea level in the hamlet of Prognol, in the heart of the Valpolicella Classica, in an area formerly known as Pruviniano.
The 15-year-old vines enjoy a south-east, south-west exposure, soils composed of silt, clay and limestone. After the harvest, the grapes remain to dry until December/January in the fruit cellar. The vinification also includes a month of maceration on the skins.
The finished wine rests in oak barrels for about a year and a half, before bottling. This elegant and rich wine reveals a deep color with garnet tones. Its aromatic profile is fragrant, complex and powerful with notes of cherry jam and red fruits, dried figs and prunes, baking spices, cocoa and coffee and some balsamic hints in the background.
On the palate it is dense and concentrated, intense and deep with a long warm finish. This is a wine that pairs wonderfully with braised red meat or game.
