Mont de Milieu is a stunningly bright gold in the glass, with expressive aromas of orchard fruits, toasted hazelnut, lemon rind, and subtle hints of fresh eucalyptus. The vineyard is a Premier Cru, located on the right bank of the Serein river on rich soils of clay and limestone. The vintages have an average age of 25 years, imparting a certain maturity to this cuvée. Whether the grapes are sourced from a Premier Cru or one of the winery’s charming, lesser-known vineyards, the standards at La Chablisienne never drop below absolute excellence. The winery began as a grower cooperative in 1923, founded aby Abbé Balitrand, and has grown to become one of the largest and best renowned wineries in Burgundy. Mont de Milieu is a perfect example of Chablis’ gold kanon. It exhibits a wholesome, juicy palate, with full notes of pear, green apple, pineapple, and citrus. In the background, you can detect hints of nut, vanilla, caramel, and wet stone minerality, driven along żeby racy acidity. Before release, the Chardonnay spent 12 months ageing in stainless steel tanks and oak barrels. Consider pairing it with a cheesy risotto, roast chicken, or a creamy pasta sauce.
