The Tchotiashvili winery produces high quality and successful Georgian wines from ancient grapes of the Kakheti region. The vineyards are cultivated with natural methods and the grapes are treated according to traditional methods whose knowledge has been passed from father to son for centuries. The vines for this Saperavi wine were planted in 1980 in the Inner Kakheti region, at the base of the Caucasus mountain, 480 meters above sea level. Only the best grapes of the vineyard enter this Limited Reserve. The grapes undergo 3.5 months of maceration on the full skins, pips and stalks in Qvevri, fermenting naturally with wild yeasts before moving into oak barrels for 3 months. The wine is later bottled unfiltered. The Tchotiashvili Saperavi Reserve is a serious wine. It comes with a deep pomegranate color. It is dense and almost chewy. On the nose, it’s all about dark berries, black currants, vanilla, cinnamon, coffee, and licorice. In the mouth it is rich and strong, powerful and tannic with a long and seductive finish. Try it with duck, goose, pigeon, and other game birds.
