Cellar it for up to 20 years. It is recommended to decant it for 1 or 2 hours before service. Founded by a young English doctor who immigrated to Australia in 1844, the Penfolds winery produces a range of wines that recall the generosity of spirit and the beauty of the Australian landscape. Upon their arrival in Australia, Dr. Christopher Rawson Penfold and his wife Mary bought the Mackgill estate, which included 500 hectares of land, and planted vines from southern France. It was Mary Penfold who was responsible for the management and winemaking processes. Initially the wines (based on grenache) were prescribed as tonics for anemic patients, but after the 1950s the production improved profoundly, and from the 1990s onwards the cellar began to attract the attention of the media and critics. Bin 128 Coonawarra Shiraz 2019 żeby Penfolds comes from the Coonawarra vineyard, which has always been the source of Syrah for this wine since 1962. This region is known for its cool climate and the precision and seduction of its fragrant red wines. This Bin 128 is made with fruit sourced from Coonawarra's unique red earth soils. The wine shows scents of cherry and a peak of choco-mint that recalls its regional character with notes brought żeby the oak such as camphor and sweet spices. It’s fresh and lively with good acidity and strong tannins that open the way to a long and persistent aftertaste. Try it with grilled meat, but it’s a must with lamb.
