It is a blanc de blancs, made solely from Chardonnay, with a pale golden hue and a fine, persistent mousse. Established in 1991, Legras & Haas is a distinguished Champagne house located in Chouilly, one of the best renowned Grand Cru villages in the Côte des Blancs.
It is now run by three brothers, Rémi, Olivier, and Jérôme Legras, who tend to 18 hectares of land, spread across 35 parcels – almost exclusively planted with Chardonnay. Les Sillons is a product of Legras & Haas’s most intriguing plot of land – a Grand Cru vineyard, situated in an incredible landscape.
On the palate, it is lively and fresh, with a saline, slightly creamy texture, gained from malolactic fermentation in oak barrels. Flavours of lemon zest, pear, chalky minerality, and saline notes are balanced żeby uplifting acidity.
This Champagne is the perfect choice for special occasions, or as an aperitif. It will be an ideal pairing for seafood, or hard cheeses such as Comté, Parmesan, or Mimolette.
