The Louis Bouillot estate have been crafting Cremant de Bourgogne sparkling wines since 1877 and today combine their many years of winemaking experience with the latest technology and winemaking know-how to produce magnificent wines. Their stunning Perle de Nuit or "Pearl of the Night" is a delicate Blanc de Noir which shows off the versatile character of Burgundy’s noble Pinot Noir grape and the agility of the local Gamay grape. The house carefully selects the grapes for this wine from prime sites in the Yonne, Couchois, Châtillonnais, and Côte d’Or regions. The grapes are pressed as soon as possible after being picked to create a pale juice which is then fermented according to the traditional method also used for Champagne. After the second fermentation stage is complete the wine is aged for a total of 24 months in the bottle to produce a multi-layered and harmonious sparkling wine. The Perle de Nuit is a magnificent sparkling wine that makes an elegant alternative to Champagne for celebrations and special occasions. Ideal served as an aperitif, this sparkling wine also makes an ideal accompaniment to complex dishes like a rich tagine, chicken served with dried apricots and couscous, or spicy Asian dishes.
