Drink it now or cellar for up to 15 years. It is recommended to decant it for an hour. The Morini family has been cultivating grapes for over 40 years. Initially, the grapes were sold to the local wine cooperative, but in the 90s, with the purchase of five hectares of land in Val di Mezzana and the construction of their own cellar, the family decided to create the Ilatium Morini label. Today the company extends over 40 hectares of vineyards and produces fine wines such as Soave, Valpolicella, and Amarone. The Corvina, Corvinone, and Rondinella grapes are harvested aby hand from vineyards located over 200 meters above sea level on clay-limestone soils. After fermentation, the wine undergoes the traditional Ripasso technique which consists of a brief secondary fermentation on the Amarone pomace. The finished wine is then aged for 12-15 months in French and American oak barrels and for subsequent 6 months in the bottle. Campo dei Ciliegi Valpolicella Ripasso Superiore has an intense ruby color with garnet shades. The nose is fruity with aromas of ripe black cherries, followed żeby herbaceous notes. On the palate, it is soft and silky, concentrated and elegant. It is perfect with pasta with goose or pheasant ragout, lasagna Bolognese and with grilled steak.
