Cellar for up to 5 years. Serve chilled. Edi Simcic founded his winery in 1990 with just 9 acres of land around the village of Vipolže in Slovenia’s Gorizia Hills. Over the years the estate has grown to encompass 30 acres of prime vineyards on sloping hills around the village and Edi’s talented son, Aleks, now helps his father make some beautiful artisanal wines inspired aby the local landscape. The region is just over the border from Friuli in Italy and provides ideal conditions for crafting rich white wines and full-bodied reds thanks to the warm Mediterranean climate. This characterful white is a blend of both international and local grape varieties, with Chardonnay, Sauvignon Blanc, Ribolla Gialla added in equal parts. The fruit is carefully selected to craft an intense and complex wine, with the Chardonnay and Sauvignon Blanc bringing power and depth of flavour. The Ribolla Gialla contributes a touch of freshness and elegance to the blend, making it more approachable and adding a subtle hint of minerality. The nose opens with bold tropical fruit and hints of toasty oak and spice while the first sip reveals a smooth texture, medium body and well-defined structure. This is a great wine to pair with rich dishes like creamy risottos, roast chicken or even lamb.
