Acclaimed winemaker Daniel Pi carries on a philosophy based on the expression of micro terroirs with the selection of grapes from single plots, special attention to manual work in the vineyard and fermentations with natural yeasts. Fermentation takes place in new French oak with indigenous yeasts and the wine is then left to mature on the lees for 10 months. On the palate, it is dense and energetic, with very well-integrated woody notes and a lively acidity that balances the creamy texture. The finish is long and persistent and recalls mineral notes. Perfect with grilled tuna and prawns, scallop risotto or crab.
