Asolo Prosecco Superiore Extra Dry 2021 (Bianchin)

Enjoy now or cellar for a couple of years. Serve chilled. In the heart of a low-lying hill at the foot of the Dolomite Alps, the Bianchin family of Montello crafts a stunning range of wines. The region is best known for Bordeaux-style reds, but in the vicinity of Asolo, also known as the Pearl of Treviso, Prosecco is produced in a variety of styles. Delicious sparkling Proseccos are Bianchin Montello’s claim to fame. Their family-owned property includes vineyards that are surrounded by ancient woods and all of the requirements for growing top-tier Glera grapes. The source for all of Bianchin Montello’s DOCG level Prosecco’s is Vigna di Castelsotterra, a single vineyard in the centre of Montello, located about 270 metres above sea level. This Extra-Dry Prosecco Superiore is an appealing straw yellow in the glass. Its bouquet reveals notes of peaches, green apple skin and wildflowers. It shows an excellent structure in the mouth, soft, elegant and harmonious, with a velvety feel. Flavours of apple and peach are consistent throughout, as well as crisp minerality, gained from the clay loam soil on Montello’s slopes. Prosecco Superiore is an excellent pairing for first courses, seafood in particular, and a variety of tart desserts.
