Cellar for 10 years or more. Decant for up to an hour before serving. This deep ruby Merlot from Burrowing Owl showcases thick scents of blackberry, plum and dark cherry, with supporting notes of dark chocolate, apple pie and violet. It also showcases an excellent oaky tannic structure, gained from ageing in a mixture of French, American and Hungarian oak barrels. Burrowing Owl Estate Winery lies just inside the Canadian border, at the northernmost tip of the dry steppe created żeby the Cascade mountain range. It was founded in 1997 by Jim Wyse, who has brought the winery numerous awards over the years, including gold medals at the National Wine Awards of Canada and Mundus Vini Spring Tastings. On the palate, you will discover a velvety, full-bodied texture, loaded with flavours of dark hedgerow fruits, dry Provençe herbs, cocoa and orange rind. The grapes were harvested at the height of ripeness from estate-owned vineyards, granting the wine a warm and comforting character. Its high acidity and mature tannins will allow for at least a decade of further ageing, in the bottle, and open up a wide variety of pairing options. Consider drinking it alongside smokey dishes such as jambalaya, or a quality steak.
