Drink it now or cellar for up to 10 years. No need to decant but best to open it half an hour before service. Hope Family Wines is a family-owned winery founded in 1978 in Paso Robles, California. The Hope family, then led by Chuck and his wife Marilyn, settled in the area planting apples and grapes. Today the estate extends over about 16 hectares and, in addition to producing its own grapes, collaborates with other local growers for the production of 5 lines of wines. Austin is one of their labels. This wine is a blend of Cabernet Sauvignon and Cabernet Franc which fully reflects the unique character of the region. The grapes come from Paso Robles vineyards planted on semi-arid and rocky soils and enjoy a climate mitigated by ocean breezes. The finished wine is aged in American oak barrels. The Quest Proprietary Red is a soft and deep wine. The aromatic profile is intense and complex with herbaceous notes of mint and anise, hints of chocolate, and a delicious fruity vein of blackberries and black fruits. On the palate, it is soft and juicy, round and medium to full-bodied. It has velvety tannins and a pleasant acid vein which makes it very balanced. The finish is persistent and recalls notes of chocolate and leather. Try it with a mushroom lasagna or a hearty casserole.
